Timed to mark Australia’s triennial national beef expo in Rockhampton, Bacchus Restaurant presents The Beef Discovery Degustation – a journey from head to tail.
Following the success of their special seasonal degustations in 2017, from truffles to caviar to the taste of the Queensland Coast, Bacchus’ Head Chef Massimo Speroni has created another flavour adventure for Brisbane diners to delight in.
The degustation was created to coincide with Beef Australia, which is hailed as one of the world’s great beef cattle events and also features restaurants, celebrity chefs, and cooking demonstrations for visitors to appreciate the quality and flavour of Australian beef. Similarly, the Bacchus degustation “…is a discovery of different cuts and flavours, as well as different cooking methods, from classic to modern…” says Chef Speroni.
Nine very different dishes, from tongue to cheek to tail, celebrate elements of beef that go beyond simply steak, and Bacchus Sommelier Andrew Giblin has matched the degustation with three brackets of wines over the courses. There will be three pourings per bracket of signature and rare wines from Bacchus’ feature winemaker, Kay Brothers, allowing diners to taste the different flavours and appreciate the matches.
